Allman's Beer Cheese

Description

Allman's Beer Cheese became an Award winner in the 2009 1st Beer Cheese Festival in Winchester, Kentucky on June 13, 2009.

Johnny Allman began his historical restaurant career in the late 1930's on the banks of the Kentucky river near Boonesborough. After retiring as a captain in the Kentucky Highway Patrol (and personal aid to two Kentucky governors) , he opened his first restaurant, The Driftwood Inn. It was here that Johnny and his cousin Joe developed the first batch of beer cheese ever made.

Johnny moved his site of operation to the site of present day Hall's restaurant in the early 1940's and after a while sold the business to Carl Johnson. Upon the sale, he agreed to stay out of the restaurant business on the river for five years. During this time away from the river he opened The Smokehouse on US 25 in Madison county near the Bluegrass Army Depot during the Korean War. After that location he moved to North Broadway in Lexington to open an Allman's Restaurant during the construction of IBM. He again sold that restaurant and moved for the last time back to the Kentucky river and built on a site located between his two previous locations. Johnny ran this last Allman's Restaurant until 1978 when the business burned and he retired. The last genuine Allman's beer cheese was served at this location.

In the past thirty-odd years many versions of beer cheese have popped up on store shelves and on the tables of regional restaurants. But now, "the beer cheese that started it all" is available again in its original unaltered recipe which is prepared in small batches by Johnny's grandson Ian Allman and his wife Angie. At Allman's Beer Cheese we don't skimp on cheese, we use only the same Wisconsin cheddar as was served at Allman's restaurants for over 40 years. It's a little more expensive, but we think you will agree, it's worth it.

Bellini's was founded in the Spring of 2003 by Giancarlo Marletta and Nader Iweimrin, life-long friends. Both children of immigrant families, they shared the same values and passion when it came to their love of food, family and good times. They spent a great deal of time looking for the ideal location for their upscale Italian restaurant. They insisted the location reflect the atmosphere reminiscent of the days past. At the time, downtown Lexington was plagued with condemned buildings and boarded store fronts and very few fine dining establishments. Giancarlo and Nader knew this location would be a challenge, but felt the abandoned Italianesque building would be the ideal setting for their vision of a classical Trattoria. Bellini's assumed a building lease in downtown Lexington in the historical Skuller's building. Initially, Bellini's occupied 1750 square feet and the first year of business acquired a solid customer base.

We are proud to be the first goat dairy and goat cheese plant in Kentucky. We make all of our cheeses by hand with milk from the goats that live right here on the farm. Our production will be seasonal, following the natural cycle of our animals That means we will quit milking in December, then start up again in the spring after all the kids are born and weaned. Look for us at Lexington Farmers Market in April.

A few years later the creamery began making ice cream and delivering it to neighbors by horse and wagon. ONCE IN A BLUE MOON… that’s how Leo and Jean feel about their small farm… Blue Moon Farm, owned by Leo Keene and Jean Pitches Keene, is located on the Kentucky River, in the northwest corner of Madison County. The Keenes moved to the farm in 1988, looking for a place to expand on their garlic growing hobby, and farm work quickly necessitated putting their antiques business on hold!

They were among the first farms in KY to be Certified Organic, and while they no longer are certified, they still grow the same way. Since the beginning their business has grown to sustainably raising over 50,000 bulbs of garlic in about 25 varieties which they sell not only at the farmers’ market, but also to area restaurants, retail businesses and by mail order from their home. They create garlic braids and have twice been commissioned by NBC’s Today Show to create 6-foot and longer garlic braids for use on cooking segments. They also produce their own "knock-your-socks-off" garlic powder, both regular and hickory smoked, and the newest product - Garlic Scape Pesto. It’s a pesto made from the flower stems ("scapes") of hardneck garlic plants, and has been received with rave reviews!

The Brownings, Reba and Paul as they are called by their customers, have been in the ham busines for 38 years and have done very little advertising. Word of mouth has been the greatest salesman for hams. Browning hams are shipped from coast to coast.

Paul's dad taught him the business. "When we ran a restaurant in Paris, we used his hams. Although he passed away, he is not forgotton by our customers." Browning's hams come from long-standing country ham curing families. Reba's dad also cured many hams. "The greatest smell is to wake up in the morning with ham frying and biscuits in the oven. Paul and I have experienced this many times."

We give each order for cooked hams our full attention to see that they are cooked and coated with our special coating, blended with spices, and carefully sealed so none of the flavor escapes.

We will gift package these hams and provide a gift card. Large orders of then or more are given special prices. You provide the list and addresses and we will do the rest. Call for pricing. This is a great way to do your holiday shopping.

The Kentucky Chipotle was created in 1999 after Kathy threw a few red jalapeños in with a pork loin she was smoking with hickory. Using tomatoes from her Falmouth farm's garden, she created a sauce with the Kentucky Chipotle. After that, Kentucky Chipotle Sauce was produced in quantity and was a frequent gift to friends and acquaintances. All who tasted it craved more. Producing the Kentucky Chipotle Sauce became Kathy's obsession.

Sheila tasted Kentucky Chipotle Sauce in 2004. Sheila had been growing vegetables without chemical fertilizers and pesticides on her Augusta farm since 1989, selling her produce to area chefs. But when she tasted the Kentucky Chipotle Sauce, she had to know how to create it. Her zeal for the Kentucky Chipotle and the resultant sauce was equal to that of Kathy's.

A new relationship was born out of a shared passion for farming and cooking. Sheila and Kathy decided to see if there was widespread demand for Kentucky Chipotle Sauce as well as other products manufactured from their produce.

This little composite above reminds us of our roots and Grandpa Amos' little old-fashioned butcher shop. He taught us well. He taught us how to select and cut fine meats to perfection and the necessity of putting customer needs first. Grandpa Amos made owning and operating our family business enjoyable for everybody, especially the customers. Maybe that's why personalized customer service is such an important part of our business today. The knowledge and skills Grandpa Amos passed on to us are virtually unattainable these days. And at the heart of it all, you could say we are just fun-loving chips off the old butcher block. Yep, we inherited a lot from Grandpa Amos, not to mention our receding hairlines. David Huston is a devoted family man with secret passion for all things culinary. Shortly after graduating from Bourbon County High School in Paris, KY, David attended the Scottsdale Culinary Institute in Scottsdale Arizona. Today he applies his talents to treat his family and friends to his flawless creations both in the kitchen and off the grill. One of the most sought after of all of his creations is what has now come to be known as "Dave's Beer Cheese."

David's love of beer cheese began as a child. Many trips to a world famous Kentucky River Restaurant, where beer cheese is a highlight of the meal, gave David his introduction into what has become his passion. Years of attempting to recreate this unique blend of cheese, "secret spices" and beer ultimately resulted in the creation of "Dave's Beer Cheese."

After many years of trying to recreate the taste, the "secret recipe" was finally revealed to David by a friend who had obtained it from the original creator. David made a vow to maintain the recipe as a closely guarded secret. To this day, David has never shared the recipe with anyone, not even his wife!

Elmwood Inn Fine Teas and Benjamin Press sprang from the success of the Elmwood Inn Tea Room. Over its 14 years of existence, Elmwood Inn developed an international reputation as one of America's favorite locations for a traditional afternoon tea. In 2000, the tea room became the first American venue to be included in the prestigious GUIDE TO BEST TEA PLACES, published annually by The Guild of British Tea Rooms.

What is goetta?
Pronounced "get-uh," goetta is a German breakfast sausage that blends the textures and flavors of pork, beef, whole grain steel-cut oats, fresh onions, and spices. It is slow-cooked daily and perfectly prepared when browned and served. Producing over one million pounds of goetta each year, Glier’s Goetta is the best selling goetta in the world.

Why is goetta unique to Northern Kentucky and Cincinnati?
During the 1880s, waves of German immigrants were drawn to the fertile Ohio River valley that is Northern Kentucky/Greater Cincinnati. The new community laid roots and flourished in the area. Along with many other elements of their culture, the Germans brought their favorite dish – goetta – with them. Just like it is in their homeland, goetta is a regional recipe.

How do I cook the perfect goetta patty?
First, slice the goetta into half-inch patties. Making sure they do not touch each other (to be sure they will not stick together), place the patties in a non-stick skillet that has been preheated to a medium temperature, 350 degrees. Let cook for about 6 minutes, allowing the first side to brown completely. Flip, and brown the other side until crisp. When both sides are golden brown, the goetta is ready to enjoy.

What is the secret ingredient of goetta?
Steel-cut, or pinhead, oats are the secret ingredient to delicious Glier’s Goetta. Good Foods Co-op is a locally owned and operated cooperative business where everyone is welcome to shop at either of our locations - Good Foods Market & Cafe on Southland Drive or Good Foods Chapter 2 inside the downtown Lexington Public Library. Good Foods has been in business in Lexington, KY since 1972. With a modest start as a buying club in a garage, we now claim a 10,000 square foot Market. In 2002, we expanded our current location by adding a 2,825 square foot Café. Then in 2004 we opened a small Café, Good Foods Chapter 2.

In the early 1990's, Kenny Mattingly of Kenny's Farmhouse Cheese, whose family milks about 120 dairy cattle in Barren County, Kentucky, was worried about the future of milk as a commercial commodity - and especially about whether he and his family could continue to make a living on their 200-acre farm. After a farm trip to Europe, he returned with a different notion. He was impressed with the way small family farms in Western Europe were finding ways to add value to their products and market to their local communities. It gave him a new vision for his farm.

So in 1998, he and his family started using some of their milk to produce Gouda cheese using Old World, handmade techniques. That first year, the family made about 4,000 pounds of cheese. Last year, they produced 70,000 pounds of cheese in varieties that include Cheddar, Colby, Jack, Asiago, Swiss and Havarti, as well as some outstanding blue cheeses.

"It started out as a business decision," said Mattingly. But somewhere along the line, he became a cheese-maker. The work for Kenny Mattingly, his family and farm hands begins at 4 a.m. with the milking. Mattingly's cows are raised without synthetic hormones and supplement their pasture diet with corn and hay grown on the family's farm.

The raw milk is piped to a sanitary, all-white room that looks like a science lab - more precisely, a cheese laboratory. Mattingly fills a large stainless steel vat with the fresh, unprocessed raw milk, constantly stirring, heating and adding a bacterial culture from France that naturally begins the conversion to cheese.

Because the milk is so fresh, pasteurizing is not necessary. The heat and the cheese-making process preserve naturally beneficial enzymes in the milk, aiding digestion of lactose and absorption of calcium. Just as important, raw milk cheese has a much richer depth of flavor.

Two extra touches that he believes make his cheese more special for his customers are coagulating the cheese with vegetable-based rennet, to make it more acceptable to vegetarians and handcutting/ packaging each block or round of cheese.

Kenny Mattingly's vision for his farm has come a long way since that trip to Europe back in the early 1990's. Little did he know that what he experienced on the small family farms where he stayed, would he himself be adding value to his products and marketing to his local communities.

The Kentucky Beef Council is an organization working for the cattle producers of Kentucky in areas of promotion, education and research. The Beef Checkoff funds these programs.

The Checkoff is a $1.00 per head collection, which is placed on all Kentucky cattle when they are sold. Fifty cents out of every Checkoff dollar collected goes to the Cattlemen’s Beef Board in Centennial, CO., which oversees Checkoff programs. The remaining 50 cents stays in Kentucky to fund state coordinated activities.

The Kentucky Beef Council office is located in Lexington, in the same building as the Kentucky Cattlemen’s Association (the membership division of Kentucky’s beef industry). The Kentucky Cattlemen's Association serves as the "certified state beef council" collecting the checkoff funds and placing them in the KBC's account to be used for promotion, research, consumer information, producer commuincations, and industry information.

The Kentucky Beef Council is one of 46 state beef councils. Beef promotion, information and research programs are coordinated between the state beef councils, the Cattlemen’s Beef Board, and the National Cattlemen’s Beef Association.

Fondue is a fun and interactive dining experience - and for more than three decades, The Melting Pot has defined the niche across the American dining scene.

The first Melting Pot opened in April of 1975 in Maitland, Fla. - just outside of Orlando. It was a cozy, quaint location and its first menu consisted of just three items: Swiss cheese fondue, beef fondue and a chocolate fondue dessert. Our Sicilian family's tiny groves produce single cultivar or “cru” extra virgin olive oil near the town of Ragusa , and their oil carries the prestigious DOP certification, which only 20% of producers can boast. Our Umbrian family farm is situated between the towns of Assisi and Spello, in one of the most important olive oil regions in Italy . Our family produces only 1,700 liters per year of Olio Umbro organic extra virgin olive oil.

Our Olio Biologico is produced from olive groves that coexist with lemon groves. Olive trees and lemon trees sharing the soil is how the hint of citrus shows up in our Biologico. The farm, near Naples , has been in the family for over 400 years.

All of our oils are produced with olives that have been hand harvested. The importance of this is comes from the fact that harvesting olives by hand helps to insure that the fruit is not bruised, reducing the risk of oxidation. This helps maintain a higher level of antioxidants and healthful properties found in the oil. Although it is typically more laborious and tedious, the result is worth the effort.

Produced in small quantities, our truffles are made with premium, single-source chocolate that will please even the most sophisticated chocolate connoisseur. Our tarts and pastries are surprisingly light and buttery with a subtle sweetness that provide a delicate, flavorful experience.

This style of light, not overly sweet confection is the result of co-owner Marianne Swintosky's culinary sensibilities. Born and raised in Germany, Marianne grew nostalgic for the great pastry traditions she had enjoyed in her native Europe and subsequent travels. Inspired by renowned chefs as well as small village bakers, she has produced her own collection of European inspired delights that are becoming a Lexington tradition.

Our company, Viburnum Valley Farm Confections, LLC, is located in Lexington, Kentucky and named after Marianne's farm. The idea of the company began to form when both owners (Marianne and Elaine Shay) became next door neighbors and developed a fast friendship over chocolate.

Weisenberger Mills is located on the South Elkhorn Creek in southern Scott County, Kentucky. The creek has provided the water to power the mill's twin turbines since the early 1800's.

Six generations of Weisenbergers have operated the mill at the present location since 1865. August Weisenberger emigrated from Baden, Germany to start milling at Midway, Kentucky in 1862. He purchased the existing mill in 1865. Philip, his son, was the second generation to take over operating the mill. He was later joined by his son August. Today, Philip Weisenberger, August's son, owns the mill. He has been joined by his son, Ernest, and grandson, Philip.

In the early years, our primary products were soft wheat flour and white cornmeal. Through the years it became apparent that the customers demanded more. As a result, our present policy of meeting all the baking needs of our customers evolved.

We now offer more than seventy items in various sizes. Our inventory contains flour for any baking purpose, complete mixes for many popular end products, and breading blends for chicken, fish, meats, and vegetables.

Until the mid 90's, Leslie Montie never dreamed she would become the founder of a company that helps families from coast to coast enjoy great tasting and nutritious meals that can be prepared in minutes. When Leslie discovered that her two young children had medical conditions requiring special dietary restrictions, she began her search for healthy alternatives. "It was amazing how this impacted our entire family." recalls Leslie. "I needed to come up with meals that my children would not react to, yet still enjoy. And since I was a full-time working mom, they had to be easy to make."

Leslie sought the help of her parents, Frank and Judy. As concerned parents and grandparents, they immediately began experimenting with new ways to flavor and prepare foods. "It was really a hit and miss sort of process and we came up with some great ideas." says Leslie. "I remember thinking that others could benefit from what we discovered; how to make mealtime an enjoyable and effortless experience, dietary restrictions or not!" Leslie's sincere desire to help others was the inspiration that led her to found Wildtree in 1996."

Leslie and her mom, Judy, began by selling their specialty blends at local cooking fairs. They were overwhelmed by the reception and quickly gained a loyal following. When an enthusiastic customer asked Leslie if she had considered selling through home parties, she loved the idea! "I held my first party a few weeks later and knew it was the ideal way to bring our products directly to families." The combination of Leslie's natural marketing ability, Judy's talent for product development, and Frank's manufacturing expertise was powerful. In 1999 Wildtree, was officially launched as a party plan company and gained local acclaim.
